Potassium Metabisulphite is an active ingredient found in Campden tablets, popular with winemakers and beer brewers alike. And in this powder form, it’s much easier to control the addition rates of this versatile agent with a wide variety of applications in various branches of the food and beverage industry.
In winemaking, it is most commonly used as a preservative that clears up the wort from wild yeast and bacteria before cultured yeast is introduced for fermentation, thus ensuring proper flavour and aroma development. It also helps to prevent enzymatic browning in white wines, which also impacts the flavour and quality of the product.
Typically added in rates of 1/4 teaspoon per 5 gallons of wine as a preservative.
