Wheat malt differs from typical barley malts in a few ways:
- It makes for sweeter brews, though usually with less flavour.
- It has better head retention than barley due to more proteins in the wheat.
- I tends to work better when combined with other grains due to it potentially becoming sticky and difficult to lauter.
Wheat malts are mostly used to add unique flavours to a barley brew or to make a proper Wheat Beer or Witbier.
