Burton Ale Yeast - WLP 023
Unlike most British ale strains, WLP023 exhibits medium flocculation that results in somewhat hazy beer, while its attenuation is in the higher end of the spectrum, delivering a drier body.
While it’s an excellent yeast for making hop-forward ales, you can use WLP023 yeast in styles that are defined by a more complex grain bill such as Brown Ale, Mild, Porter or Stout.
It is definitely a go-to yeast for making authentic British ales of all types. Still, it can certainly be employed in a broader range of styles, especially in American versions of Northern European beers.
