How does using this Alpha-Amylase contribute to complete fermentation? It does so by breaking down more complex sugars than yeasts typically can.

A higher ABV, as well as a cleaner beer with less sediment, is the result you will get.

To use, add 5 g of the enzyme, bring your wort to around 185 to 203°F (85 to 95°C), and add the other 10 g of the package.
