ABC Crafted Series American Candy Flavour Oak Pellets contains 3.5 oz (100g) of ideally sized pellets, perfect for small-batch winemaking. Maintains the wine characteristics with a combination of vanilla and caramel. The pellet oak format is a very useful and differentiating tool in winemaking due to the characteristic aromas extracted. Contains higher concentrations of volatile compounds and derivatives of thermal degradation of lignin, but lower concentrations of ellagitannins. The high glycosidic polymer content produces heavy smoked toasted, caramel, and roasted notes and significantly increases the wine’s aromatic complexity. Ideal for use in winemaking thanks to their rapid transfer of aromatic compunds at a reduced dose as a result of their structure, high porosity, and permeability. Does not contain artificial binding agents.
