Star Anise is widely known for its peculiar character due to the substance called anethole found in the plant. It is responsible for the distinct aroma of such drinks as Sambuca and absinthe, among many others, with a pronounced spicy, mint, and refreshing flavour.
As with most spices used for brewing, star anise is usually added at the later stages of wort boiling to extract most of its aroma. However, you can certainly experiment by adding the spice after primary fermentation for more pronounced flavour extraction.
The amount used will vary depending on how pronounced you want the anise character to be, however adding even sparing amounts of Star Anise, the nuances will be noticeable. The package contains 1 ounce (28 grams) of Star Anise, sufficient for extensive brewing experiments.
