Belgian Saison II Yeast - WLP 566
A complete opposite to the famous Saison I strain, WLP566 Belgian Saison II Yeast delivers a flavour character that falls into the other side of the spectrum when talking about Belgian yeast strains.
WLP566 tends to produce a more pronounced fruity ester profile with spicy phenolics subdued, which is a welcome trait for many brewers who want to put a stronger emphasis on the fruity aspects of Belgian Saison.
It is also a very good attenuator with values up to 85% reached on many occasions and tended to be quite tolerant to high fermentation temperatures.
