An excellent red wine yeast, Merlot Wine Yeast, has been specially formulated by White Labs to allow for high alcohol tolerance and maximize attenuation, even fermenting some dextrins, which are usually unfermentable.

This makes it great for fermenting dry red wines such as Merlot, Shiraz, or Cabernet.
