When you need to brew a proper lager but need to do it really fast, WLP925 High-Pressure Lager Yeast is definitely an indispensable fermenter that can deliver great results within a limited time-span.
It is generally used unorthodoxically for lager yeast since primary fermentation is usually carried out at room temperature and pressure of 14.7 PSI, which brings the wort down to final gravity in less than a week.
This is followed by a rapid lagering period carried out at typical lagering temperature at a higher pressure, which usually takes less than 5 days, then your beer is ready for consumption.
White Labs note: Ferment at room temperature 62-68°F until final gravity is obtained, generally in one week. Sulfur production is strong the first 2 days, then disappears by day 5. It is not necessary to carbonate this type of lager.
