It is a polysaccharide made from starch that is not fermentable by most strains of brewers yeast, which means that it contributes to body and sweetness of the finished beer.
Flavour-wise it is quite similar to maltose, which means that it can be easily integrated into various beer flavour profiles without contributing an artificial or inappropriate taste.
